Something different from the well-known gourmet fish; fish in a taco. A common recipe in tex-mex cuisine and we understand why. Even more delicious when served with a fresh lime mayonnaise, so buen provecho!
Ingredients for the fish in taco
350 grams of cod fillet
2 corn cobs
6 corn tortillas
1 Lime
Oilhorn mayonnaise
Pepper, salt and olive oil
Here's how to make it
Boil the corn cobs in salted water for 10 minutes, then fry on the barbecue or in a regular frying pan all around until golden brown. Cut the corn from the cobs.
Make a fresh sauce from lime and mayonnaise. Taste how sour you like it and add more lime or mayonnaise to taste.
Cut the cod into chunks and marinate with salt, pepper, olive oil and the grated zest and juice of the lime. Then fry the fish just until cooked and add the corn at the end.
Meanwhile, fry the tortillas in another skillet until golden brown and hot.
Serve the tortillas stuffed with the fish-corn mixture and a generous spoonful of lime mayonnaise.
